Cinnamon: What is it Used For Today?

It used to be that the only time I thought about cinnamon was when I used a cinnamon stick to stir my hot chocolate. I just lover the aroma and flavor it adds to that drink. Only recently have I discovered other uses for this reddish brown spice. I never even knew you could use cinnamon in meats, stews, curries, and rice dishes. Who would have thought that the dried inner bark of a tropical evergreen tree would have so many uses. Now every time I reach for Watkins Cinnamon I consider its many uses beyond just flavoring my hot cocoa.
